    Then you see the price.

    Hundreds of dollars. Sometimes much more!

    1. It Starts With the Iberico Pigs!

    Not all pigs can become premium spanish hamThe most prestigious products begin with iberico pigs. The highest category is Black Label Bellota 100% Ibérico. For a ham to carry this designation, both parents of the pig must be 100% Ibérico.

    The combination of harsh mountain weather, genetics and diet helps create fat that is distributed through the muscle, giving spanish jamon its distinctive marbling and silky texture.

    This is what gives acorn fed jamon its characteristic richness and complex flavour.

    When you slice a good iberico de bellota jamon, you will often see thin streaks of creamy fat running through the meat. That "fat" is one of the reasons the ham feels almost buttery in your mouth!

    3. Curing Ham Takes Years, Not Weeks

    Once the pig has been processed, another long journey begins!

    The fresh jamon iberico leg is first covered in salt. This is the beginning of the traditional salt cured ham process that has been practiced in Spain for generations.

     

    After salting, the leg is washed and allowed to rest so the salt can distribute gradually through the meat.

    "Then comes drying!"

    The ham spends months in carefully controlled conditions before being moved into drying rooms and cellars where temperature and humidity help transform it.

    This slow process of curing ham develops the aroma, texture and deep savoury flavour associated with premium Iberico products.

    And there is no shortcut!!

    A premium iberico ham leg can spend several years ageing before it is finally ready to eat.

    Think about the economics of that for a moment. "Imagine making something today……and not being able to sell it until years later." 😅

    A producer raises the pig for years, cures the meat for years, stores it, monitors it and after all that time can the finished ham finally be sold. 

    THAT EXPLAINS THE PRICE!!

    4. Why the Black Label Matters

    If you are shopping for premium spanish jamon, look carefully at the label attached to the leg.

    Spain uses a colour-coded system to distinguish different Iberico categories.

    The famous black label represents Bellota 100% Ibérico.

    That means the pig is 100% Iberian breed and was raised under the Bellota production system.

    This is the category many people think of when they hear iberico de bellota jamon !!

    Other Iberico hams can carry red, green or white labels depending on the animal’s breed percentage, diet and production method.

    So two legs that both say Iberico can actually be very different products.

    Look at the fat!

    At room temperature, good Ibérico spanish ham fat becomes beautifully soft, sometimes almost melting at the touch. 

    Which explains why people happily pay a small fortune for slices so thin you can practically see through them.

    And when the jamon iberico leg is sliced extremely thin, the fat almost melts as you eat it.
